GRAPE GELATIN/JELLO (2 INGREDIENTS!)
This is my 8 year old’s current favorite snack. And, actually, my husband and I love to grab jars of it out of the fridge, too. It’s got an incredible grape flavor and springy texture and only requires two ingredients.

INGREDIENTS
2 cups 100% Concord grape juice, divided
1-2 tablespoons gelatin powder (or 1-2 packets)*
*If you like a softer end product, use 1 tablespoon of gelatin. This yields a product that is more like the traditional Jell-o of childhood. For medium-firm use 1 1/2 tablespoons. Using 2 tablespoons is my preference, because it’s sort of like a Jell-o jiggler consistency. #IYKYK
HOW TO
Heat one cup of the grape juice in a saucepan over medium-low heat.
While the grape juice is warming, stir the gelatin into the remaining cup of grape juice. It should look slushy and become thicker as it sits.
When the grape juice in the saucepan is steaming hot, remove from heat and whisk in the gelatin mixture. Whisk until all lumps are gone.
Pour into small cups and refrigerate until firm, at least two hours. Keep refrigerated. We use 1/4 cup portions, and make 8. However, 1/2 cup portions into 4 small bowls or cups works well, too. If you want to make gelatin squares, use the full 2 tablespoons of gelatin and pour the mixture into a lightly oiled, shallow dish before cooling in the fridge. Then you can slice into squares.
