GRAPE GELATIN/JELLO (2 INGREDIENTS!)
This is my 8 year old’s current favorite snack. And, actually, my husband and I love to grab jars of it out of the fridge, too. It’s got an incredible grape flavor and springy texture and only requires two ingredients.
[Serves 4-8]

Laze around time: 1+ hours refrigeration
INGREDIENTS
2 cups 100% Concord grape juice, divided
2 tablespoons gelatin powder (or 2 packets)*
*If you like a softer end product, use 1 1/2 tablespoons of gelatin.
HOW TO
Heat all of the grape juice, except 1/2 cup, in a saucepan over medium-low heat.
While the grape juice is warming, stir the gelatin into the remaining cup of grape juice. It should look slushy and become thicker as it sits.
When the grape juice is steaming hot, remove from heat and whisk in the gelatin mixture. Whisk until all lumps are gone.
Pour into small cups and refrigerate until firm, at least one hour. Keep refrigerated. We use 1/4 cup portions, and make 8. However, 1/2 cup portions into 4 small bowls works well, too.
