FENNEL, AVOCADO, AND SMOKED TROUT SALAD

This is my go-to salad in the summertime for two reasons. One, it’s so delicious. It tastes like something you’d get for a starter at a fancy restaurant, sitting outside and enjoying where the night takes you. Because I am primarily throwing this together while wearing my pajamas at home, the second reason I love this salad is because it is SO FAST AND EASY. Delicious AND easy — win-win.

[Serves 2]

Total time: 10 minutes

INGREDIENTS
1 large bulb of fennel, thinly sliced
1 avocado, diced
Juice of one lemon
4 oz can smoked trout in oil, drained and flaked
1 tbsp olive oil
salt and pepper to taste

HOW TO
Cut any extra large pieces of fennel in half. 
Combine all ingredients and toss to combine and coat with olive oil and lemon.
